Candied Melon Filling is a fruit pulp-type filling product made from natural winter melon strips, low-temperature candied concentrate and plant colloids. The appearance presents a crystal translucent light yellow gel texture. Its main ingredient is candied winter melon cubes (accounting for 45%-60%), which are in a stable gel state at room temperature and can be directly used for filling, filling, stuffing, cold drink ingredients and other usage scenarios.


Candied Melon Filling Features

① High pulp content

One of the biggest features of Candied Melon Filling is the high content of winter melon pulp. The diced size is controlled in the range of 4mm x 4mm, with a crisp taste and a solid content of up to 55%, of which the content of winter melon cubes is between 45% and 60%. These winter melon raw materials are selected from the special honey winter melon planting base of JIALECHENG in Guangjiangmen, China. The dual process of vacuum candied and low-temperature pre-cooking is used to retain its original fiber and natural flavor to the maximum extent. Each batch of winter melon cubes will be screened by infrared spectroscopy and automatically weighed before being put into cans to ensure consistent particle size and prevent the pulp from breaking and becoming muddy due to processing pressure. The high pulp content not only improves the taste level of the product when used as a filling, but also enhances visual recognition, especially suitable for mid-to-high-end baked or cold drink products that need to reflect natural ingredients.


② Hot and cold compatibility

Candied Melon Filling has a wide range of hot and cold compatibility and can be used under a variety of conditions such as room temperature filling (25°C), hot filling (80°C) and frozen filling (-18°C). Candied Melon Filling is based on a konjac flour and pectin compound system for gel stabilization, and can form a temperature-resistant structure without adding artificial thickeners. In high-temperature filling (such as mooncakes and steamed buns), the product can withstand short-term heat sealing up to 95°C without stratification, water precipitation, or thinning; in the frozen scene, it still maintains its original elasticity and sweetness after 3 freeze-thaw cycles. The measured data shows that under repeated freeze-thaw conditions, the viscosity change is less than ±0.8Pa·s, and the color difference value ΔE is less than 1.2, ensuring that processors do not need to adjust the formula when facing various processes, saving production line adjustment time.


③ Halal certification

In order to meet the export requirements of different markets such as the Middle East, Southeast Asia, Europe and the United States, the entire series of Candied Melon Filling products have passed HALAL Halal certification, ISO22000 food safety system certification and HACCP hazard control standards, and comply with EU EC 1333/2008 Food Additives Regulations. Candied Melon Filling does not contain any animal gelatin, preservatives or artificial colors, and all sweeteners and stabilizers are natural or plant-based. During the production process, the factory uses a stainless steel fully enclosed sandwich pot heating and vacuum cooling system, and the PLC system controls time and temperature throughout the process to ensure that the microbial indicators of each batch of products are stable within a safe range. ① Automatic filling line for mooncakes at Kinh Do factory in Vietnam

The Hanoi main factory of Kinh Do, a well-known Vietnamese baking brand (now part of Mondelez Group), uses Candied Melon Filling for the filling process of its "Winter Melon Seed Mooncake" series of products. The production line uses fully automatic filling equipment with an output of 6,000 pieces per hour, and has extremely high requirements for the consistency of fillings and high-temperature filling stability. Candied Melon Filling maintains the integrity of the internal honey winter melon cubes at a filling temperature of 85°C, without precipitation of sugar liquid, wire drawing and breaking, so that the cross section of the finished mooncake presents an ideal fault state. In addition, its natural pulp has a slight fibrous taste, and will not stratify when mixed with lotus paste and white kidney bean paste fillings, effectively improving the product repurchase rate. The factory supplies 3,000+ refrigerated desserts to Lulu supermarket freezers every day. After a 7-day shelf life test, the products still maintain fruity aroma and structural stability. The partner said that winter melon has a cognitive cultural basis of "cool fruit" in the Middle East. The fruit pulp filling is in line with the regional consumer culture and is expected to develop into a regular pairing option for Ramadan festival desserts.


③ OldTown White Coffee iced beverage partner stores in Malaysia

OldTown White Coffee, a well-known chain catering brand in Malaysia, launched "Winter Melon Iced Jelly Latte" in some of its stores in Selangor. The jelly layer in the drink is made of Candied Melon Filling diluted at low temperature. Since the store operators are not professional bakers, the product must be ready to use after opening the bag, have good fluidity, and not collapse when cold. Candied Melon Filling has a natural pulp fiber structure and can remain suspended after dilution at a ratio of 1:1.5 (water), and no additional carrageenan or stabilizers are required. The product is packaged in 10kg soft bags, which is convenient for catering channels to take in batches to avoid waste.
