Features

① Highly restored winter melon flavor

JIALECHENG uses a five-step process of "sugaring-cooking-dehydration-beating-cooling" in the production of winter melon paste to retain the fragrance and crisp texture of the winter melon itself to the greatest extent. Compared with the Winter Melon Fillings on the market that are only blended with saccharin, our company insists on using ≥90% real winter melon meat content, and seasoning with natural maltose and white sugar, which tastes natural, sweet and not greasy. To avoid the loss of winter melon nutrients under high temperature treatment, we use vacuum concentration technology to dehydrate and shape the winter melon at below 70°C to maintain its natural melon fragrance and pulp cell integrity. During customer use, whether refrigerated or at room temperature, the product can quickly restore its good soft and glutinous state, and is widely suitable for Chinese snacks such as moon cakes and pineapple cakes.


② Stable batch supply

JIALECHENGWholesale Winter Melon Paste Factory has a complete industrial-grade standardized production line, of which the main workshop has a construction area of 3,600 square meters, and has a clean processing area and raw material pretreatment area with a purification level of 100,000. Each winter melon paste production line is fully controlled by automatic loading → sugar treatment → double-layer steaming → vacuum cooling → automatic filling → metal detection → bag sealing and coding, with a daily output of 30~50 tons, meeting the continuous order needs of large moon cake factories and pastry factories at home and abroad during the peak season.


Each batch of products shipped out of the factory is accompanied by a full-project quality inspection report, with indicators covering reducing sugar content (≥18%), moisture content (≤28%), soluble solids (Brix≥58), total colony (≤1,000cfu/g), no artificial coloring, and no preservatives. The standard packaging specification is 10kg PE bag × 2 bags/carton, which supports room temperature storage for 6 months and cold chain preservation for more than 12 months. Customers can choose customized formulas according to the regulations of different countries and accept OEM.


③ Multiple specifications are available and customization is supported

In order to meet the diverse use needs of winter melon puree in the global market, our company has long provided 5 main specifications of products, including puree, granular, flowable, thick, and color-adjusting types. Different uses correspond to different viscosities and structures: such as mooncake-specific type (viscosity 6000~8000cps, baking resistance), candy filling type (containing up to 80% solids), milk tea jelly type (strong fluidity, high pressure filling), all can be adjusted according to the customer's formula ratio.


JIALECHENG also provides color adjustment versions such as "transparent", "light gold", and "dark amber" to meet the visual preferences of consumers in different countries. The version exported to Southeast Asia is lighter and suitable for low-sweet tastes; the version exported to the Middle East is richer and suitable for nuts and pastry desserts. Application

① Vietnam "Bibica" Mid-Autumn Mooncake Factory Cooperation Project

Since 2020, Vietnam's well-known baking group "Bibica" has established a stable cooperative relationship with JIALECHENG, importing more than 120 tons of winter melon puree before August each year for the production of the Mid-Autumn Festival series of Cantonese mooncakes. Customers use our company's "high temperature stable Winter Melon Filling" for "egg yolk winter melon", "cream winter melon puree", "coconut bean winter melon" and other flavor products. Through synchronous adaptation with Bibica's production process, our company customizes a light sweet flavor formula with a sugar content of 58±2 for it every year, and provides customers with Halal HALAL and product origin certification (CO FORM E) for export to Vietnam, greatly shortening customs clearance time and cold chain factory entry cycle. In 2023, the overall sales volume of Bibica Winter Melon Series Mooncakes reached 8 million pieces, and feedback from the product helped it achieve a high cost-effectiveness and production stability rate.


② Customized project for chain bakery in Chinatown, Kuala Lumpur, Malaysia

In the Chinatown area of Kuala Lumpur, Malaysia, several Chinese chain bakery brands (such as Loong Kee and Fung Wong Bakery) use our customized winter melon paste for the production of traditional desserts such as pineapple cakes, wife cakes, and salty winter melon cakes. These brands prefer granular winter melon paste products, requiring the size of winter melon particles to be around 3mm, which is used to maintain the chewing feel and visibility of the product after molding. Our company provides them with winter melon pulp products with a particle content of ≥40%, and adjusts the Brix to 55±1 according to the low-sugar health trend in the Malaysian market. Customer feedback shows that the product has a refreshing flavor and is not greasy in the production of "salty winter melon mooncakes", and it does not caramelize after baking, which is very suitable for sale in tropical climates.


③ OEM project for jam pastries of "Vigor Kobo" in Taiwan

The well-known Taiwanese pastry brand "Vigor Kobo" has long used the winter melon paste raw materials provided by our company in its classic souvenir "pineapple winter melon cake" series. Different from the mooncake-specific type, this customer is more concerned about the product's ability to control oil and retain water in the pastry. Our company specially provides low-water content fruit puree (≤25%), and after adding compound vegetable oil and moisturizer, it ensures that the product remains moist after long-term transportation. Because Taiwan's regulations have strict requirements on imported food, our company provides SGS pesticide residue testing, free sales certificates and special label templates for Taiwan, Hong Kong and Macau to help its products be successfully listed in convenience stores and gift channels. In 2023, this series will ship more than 500,000 gift boxes.
