The most authentic winter melon paste originates from Taishan, where it has been crafted for nearly a century. Only locally grown gray-skinned winter melons—cultivated in unique red soil and climate conditions—are selected for their firm yet tender flesh, making this a celebrated culinary innovation of Taishan. Among its pioneers, Mr. Tan Zhengjun, founder of Jialecheng, stands out as a master artisan with over 30 years of dedication to perfecting and promoting this delicacy.
To ensure premium and safe raw materials, Jialecheng meticulously sources ideal soil and climates across China for cultivating gray-skinned winter melons. The company has established dedicated farming bases in Guangdong, Guangxi.
Hainan, Anhui, Jiangsu, and Shandong. Each melon grows naturally for 120–150 days, harvested only when meeting stringent quality standards for artisanal processing.
